I made these pumpkin cheesecake Oreo bars last night.
Oh man, are they delicious. I used a low fat cream cheese, so they’re not as firm as I would like, but they are still SO GOOD. I also don’t have a food processor, so I just smashed the heck out of the Oreos with a can of beans (John helped). Also a good way to take out some rage.
I bought a ginormous can of pumpkin and after making two pumpkin items, I still have half of it left, so the pumpkin baking continues with these.
I can get behind these.
The lovely Rachel shared this recipe for margarita cake with me after sharing her baking adventure via Twitter and making my mouth water. It sounds delicious. And perfect for a summer party.

Her notes: Things I would do differently: use graham crackers instead of pretzels or a combination; add some sugar to the filling mix: the cake was tart but not very sweet; and you could definitely use whipped cream instead of whipping heavy cream like the recipe calls for. Also you definitely need a springform pan (the kind of has the sides that come undone). I did not have this and it would have looked much better if I had (still tasted good). Enjoy!
